Why Mayonnaise is Great in Banana Bread
Each time we post a bread recipe that is made with mayonnaise, we get a few comments from people who don’t think it would be very good. Please remember that mayonnaise is made with oil and eggs, which is what most recipes call for when you are making a cake, etc. This bread is wonderful and super moist. It’s a great way to make banana bread.
Can This Bread Be Made in Advance?
Yes, you can make this bread in advance. I think it is better the next day. It’s gets more moist each day and the flavor is wonderful. Make this bread for breakfast with coffee or brunch! It’s a great dessert too.
Can I Double This Recipe? Can I Freeze it?
Yes to both, you can easily double this recipe and make two loaves. This is a great recipe to give as a gift, make a loaf for you and give one away. This bread can be fozen too!
Swaps and Additions
We use Duke’s mayonnaise and that is our favorite brand. Any will work, and no, we have never used Miracle Whip, it’s a totally different product. You can add chocolate chips, raisins, spices, different nuts, or leave them out altogether.

Mayonnaise Banana Bread
This delicious banana bread is so moist. It just gets better with time. My family loves it!
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup white granulated sugar or could use maple syrup
- 1 large egg
- 1/2 cup mayonnaise I used Dukes
- 1 teaspoon vanilla extract
- 3 ripe bananas mashed
- 1 cup chopped nuts I used walnuts
Whisk together flour, baking soda and salt in a bowl.
In another bowl combine sugar, egg, mayonnaise, vanilla extract and mashed bananas. Mix with a spoon.
Combine the two bowls and mix with a spoon just enough to wet all ingredients.
Add nuts and mix.
Spray a 9 x 5 bread pan with cooking spray and spoon in the wet dough.
Bake in a preheated 350 degree oven for 60 to 65 minutes or until the center tests done. Makes one loaf.
